(More customer reviews)I was on the verge of purchasing this cooker because one health website described the cooking bowl surface as made from anodized aluminum rather than coated with nonstick material. However, the Waterford customer service(linked from a Weil website as a main seller) says it IS in fact coated. The rationale is that the cooker max temp. is 300 degrees and since teflon only reacts and leaches past 400 degrees, chemical interaction with food is minimized or eliminated. I understand that even current "advanced" coatings still flake, erode, end up in one's food. With wear, they make cleaning harder, not easier. How does the coating affect appliance longevity? And why is a coating (also environmentally unhealthy to produce) even necessary for a steam cooker and fairly low temperatures? I manage to clean my Calphalon plain anodized alum. pots just fine. Was this cooker ever made with anodized alum., as I read? If so, I hope Dr. Weil will consider returning to that. Many of us are trying to reduce plastic contact with food. It's very disappointing that "Healthy Kitchen" products are apparently add to the plastic problem. Dr. Weil might help consumers by making material content specifics widely available online and wherever these products are sold. All I could find on this cooker was an instruction .pdf booklet that reveals little about materials. Anyone who has sought glass, pyrex, good ceramics, stainless, etc. in their cooking equipment knows how hard one must work to find this info., but I expect better from Dr. Weil. Thanks, and I hope this information helps others. Anyone who knows of a truly clean, solid, low-plastic, multi-use cooker, please post!

Zojirushi NH-VBC18 10-Cup Rice Cooker and Warmer with Induction Heating System Review

(More customer reviews)I purchased my Zojirushi Magnetic Induction Rice Cooker because I wanted a first rate cooker. I knew that I would be getting a high-quality product simply because it is 100% engineered and manufactured in Japan. I was also curious how the "Magnetic Induction" worked and what benefits it provided over traditional heating coil-based cookers.
As it turns out, the magnetic induction thing is very, very nice. There is no heating coil at the bottom of this cooker. Instead, magnets are cycled on and off around the pan causing it to heat up perfectly evenly. The thing that amazed me about this cooker is that the traditional "skin" of browned, crusty rice always found at the bottom of other cookers is totally absent. Every single grain of rice you put in is wonderfully cooked coming out.
While this cooker has a large capacity, it handles small quantities wonderfully. As a single bachelor/student, I can't say enough how nice it is to be able to cook only a single cup of rice when I need it. In traditional coil-based cookers, if you want a single cup of rice, you have to cook one and a half or two, because quite a bit becomes crusty/burned at the bottom of the pan. Not with this cooker!
I also have yet to come across a variety of rice that this cooker could not handle. I've used it to cook aromatic Indian basimati rice, wild rice, rice for sushi, Asian white rice, and wild rice medleys. Every single one has come out perfect.
Clean-up is a breeze. The pan simply lifts up and out with two nice plastic handles; they're cool to the touch... no oven mitts required! The non-stick is the highest quality I've ever encountered. It feels as though the inner pot is armor plated. One swipe, a rinse, and it's ready to go again.
To be sure, this cooker is at the high end of the price scale. Having said that, in light of the build quality, cooking excellence, and ease of cleaning... it was worth every penny!

(More customer reviews)I own three pieces of cast iron cookware, and this item is one of them... and among my favorite cooking implements, period. For dishes requiring steady, even heat and for cooks who require durable cookware with easy clean-up, cast iron CANNOT be beat!
This fryer is going to last forever. Its care is easy: I scrub it with hot water only, and dry it with an old rag and apply a thin layer of vegetable oil while the iron is still hot... a year and a half later, it's still rust-free and delivering the reliable service I have come to expect and admire. No scratches interfere with its performance, as is the case with my allegedly-long-lasting Wearever nonstick cookware set (what a waste of money THAT was!). In fact, in this particular chicken fryer, I've produced everything from french fries to spaghetti sauce to eggs and bacon to french toast! It's a dependable griddle, skillet, grill, and pot, and it goes right from the stovetop and into the oven for maximum versatility.
The best thing about the chicken fryer is its somewhat smaller circumference than the skillet or the Dutch oven. It takes up a bit less stovetop space and provides greater depth, making it ideal for small batches of soups, stews, or deep-fried goodies.
I am an avid home-chef, and I can say without exception that my cast-iron cookware is the best kitchen investment I've ever made.

(More customer reviews)Even though I felt the low price on this cooker was suspect, I thought I would give it a chance. I wasn't expecting it to last long or work well - boy was I wrong!! I have used it several times a week for going on three years now, and it's still working flawlessly - try to say that about, well, probably any other small applicance in your entire kitchen.
Everyone should have a rice-cooker - they're great time-savers, not to mention meal-savers. Even people who can't boil water can make perfect rice every time.
The reasons I love my Aroma cooker in particular are:
1) It makes much less mess than others I've used (rice cookers tend to blurble starchy water around the rim while cooking, but the heavy glass lid of the Aroma, and the vent hole, keep it from spattering the counter)
2) It shuts off automatically when it's done cooking, regardless of the type of rice used (I still have no idea how it "knows" there's brown rice that needs a longer cooking time in there, as opposed to jasmine rice which cooks faster - but it does!)
3) It keeps the rice warm for hours if necessary without burning on the bottom or drying out
4) The inner pot lifts out easily to clean.
If I ever have to replace this little workhorse, I'll definitely replace it with another Aroma. (I hope by then they make one in red!)

This model has a quick cooking feature which I use a lot, it is so convenient, it cooks the rice quickly and beautifully and beeps to let you know when it is done. When the rice finishes cooking the machine turns itself to the warming mode and simply keeps the rice warm and ready to serve. I finally have the perfect rice which most restaraunts can not hold a candle to.
I like jasmine, sticky and plain white rice and they all cook great in here, I have also cooked rice for sushi and made puerto rican arroz con gandules in here, all were done perfect!

(More customer reviews)I bought this slow cooker because it is a great size and has all the key elements I wanted: Timer, low/high/"keep warm" temperatures, and automatic switching from cooking to "keep warm" mode (can you believe that some don't have this feature?!!!). I generally cook for two but the size of this unit is fine for up to eight people (if they aren't too hungry).
I have another slow cooker (in another residence); its brand name is Rival. I would check the two brands out and decide between them based on price.

(More customer reviews)This is a great heavy, heavy duty pot. I use it for my home beer brewing as a brew kettle over a propane burner and it is awesome! It is big enough that I never have boil overs and the steel is so thick I had my valve fitting welded on instead of using a removable weld-less through fitting. The bottom is tri-clad and about 1/2" thick. It is a great value. The inside and lower outside of the pot is not finished to a high smooth gloss like some of the more expensive pots but I have not found any negatives to that as far as cleaning or cooking go. I use a Scotch Brite pad for cleaning it and have noticed it getting a smoother finish. The handles and lid are incredibly well made. I know I will never need to replace it. I just might buy another one.

Uses include making delicate as well as hearty sauces, steaming, boiling water for noodles, an even deep frying. It has a greater capacity and greater ease of use than a Fry Daddy. The non-stick interior and exterior makes for quick clean up and the fact that it is fully submerssible (sp?) is a nice convenience.

(More customer reviews)love love love this... we bought it last summer to replace our tiny RVQ - (which had low btu, tiny grilling surface - and required a rv mount on the wall) after 2 summers of use - including a 24 day camping trip we can only repeat we love this stove. Our only negatives are
- needs a wind screen on the under side where the burners are - they extinguish very easily in a cross wind... we use this on the outer banks trips and there is much cross wind there - so grilling is a bit tricky there (we are going to get a local metal fabricator to make a screen we can hang on the legs) (we called company they don't make a screen for bottom)
- its Really Really heavy....
- legs some times collect water in them if you leave it out in the rain (drill a hole in the bottom to stop that..)
pros
- its very well made (hence very heavy)
- its super powerful high btu-- we have no issues cooking a steak and getting an awesome char on it.
- its very versatile -- we use it as our emerg cooker for hurricane season, RV bbq, and secondary bbq for big picnics
- lots of accessories
- very stable - legs have the perfect angle to give good stability.
- works as stove or a bbq etc
- side shelves (optional) double as a cover - no need for a fabric cover.
- easy to clean with degreaser, a kitchen brush and a garden hose :)
- the controls are well calibrated - you can simmer or sear without issue
- big surface area to accommodate large pans, or griddles.
- enamel surfaces are very durable - they have not chipped or even scuffed after 2 summers of use and frankly we are pretty rough on our camping bbq gear... only item that scuffed was the legs

It is so convenient and not heavy, it makes it easy to store if you do not have countertop room. There are all kinds of deep fryers, but none that does a better job than this one. I would recommend it to anyone.

(More customer reviews)You should be careful to distinguish in reviews the commentary on the product itself and the technique of sous vide. Sous vide is simply awesome, and far better chefs than I have proven that. If you haven't experienced it yet, you should spend the $400 on a couple of trips to the French Laundry or Alinea or WD-50 instead. If you already have, then you know what you're looking for, and the real question is how close does this device come to giving the results obtained by a Fischer Scientific immersion circulator.
I was little concerned about whether the device could maintain temperature without circulation. After playing with it and an thermometer, I can tell you that there is some gradient, but it was about a degree, which honestly is perfectly acceptable for food. After bringing it to 135 F and turning it off, 15 hours later it was 95 F, so the insulation works well. Essentially that's all there is to a sous vide machine. I can tell you that my poached eggs are perfect or that the flank steak was unlike any meat I had ever tasted, medium rare, tender, and incredibly beefy, but most of that is due to the technique, and this device competently executes the technique. As far as the user experience goes, it's silly that the lid has an insulation pad instead of built in insulation, you have to hold the button too long to turn in on and off, but the built in handles are cleverly placed.
The only negative review here so far claims that the price is too high for what it is, and compares to a different product. I disagree. For this type of cooking you have 3 choices: high end chemist's rig for $1500, water ovens like this machine, and bubblers and crock pot hacks. Most of us are not willing to spend as much as a high end stove for this, and hacking a crock pot sounds fun until you can't find your soldering iron. The SousVideMagic mentioned explicitly in that review is a bubbler, essentially an immersion circulator without the circulation. With no insulation and no circulation, the temperature gradient will be large. Plus, although the base price is $139, that doesn't count the "1500D controller and an air pump". The whole kit costs $300. It is interesting to note that the same company has also come out with a "water oven" like the SousVide Supreme, and it's $430. Check out the website here: [...] .
Sometimes there's a sweet spot in the price/performance ratio, and this machine is in it.

(More customer reviews)This is a convenient,inexpensive, high quality, easy to clean up cooking unit with a great instruction and recipe book included. More recipes are on the NESCO website as well.
I do not know how to cook. If it weren't for my wife, I would have starved by now. When my son was small, and my wife was sick, he would beg her to get better so he wouldn't have to eat my cooking, which he likened to rubber chicken.
But a few years ago, my wife's aunt gave us a 6 Quart NESCO COOKWELL roaster and voila! I can cook meals that even my son would enjoy.
This is probably the gift for anyone living on their own for the first time, like a college student, since it is extremely easy to prepare and cook healthful, delicious meals EVERY TIME.
If you follow instructions in the enclosed recipe booklet, you can't make a bad meal! My favorite is the lemon pepper chicken with linguine.
The best part is that the COOKWELL roaster pan insert is removable, is used to serve the food and cleans up really easily. The electrical heating part never sees soap and water, since it only serves to surround the cookwell roasting pan insert with a "circle of heat".
This is not a crock pot, although you can set it up as such. Cooking times are usually 45 minutes to an hour and around 350 degrees.
EVERY student going away to college should have one of these. They are easily stored, cleaned and provide inexpensive and healthy meals. And even a lousy cook like myself becomes a gormet chef. You can use the recipes and instructions provided in the booklet that comes with the cookwell or if you are more experienced, like my wife, anything is possible. THIS IS A WINNER!
