You fill the chamber with water until the glass vile shows that it is full. You then place the pot on the stove (gas or electric) and the contents heat very gently. Just this past weekend, my friend and I made chocolate bark for about 50 people and huge amounts of chocolate melted in what seemed like a few minutes and we never had to worry about burning the chocolate or getting water into it. I recommend this pot to anyone who cooks or bakes regularly.
