(More customer reviews)I would have never bought this pan if I had seen the reviews here, but I bought it on an impulse at a cookware outlet and I'm so glad I did! My pan doesn't have any of the problems (hot handle, peeling nonstick) that the other reviewers here have experienced. I suspect that since those earlier reviews the pan has been redesigned by the manufacturer.
Whatever the reason, I absolutely love it! It's the only pan I've ever found that is the perfect size (4") for english muffins and orowheat sandwich thins. Honestly, I'm a rather practical person, so I generally don't buy things with little characters on them, but this pan has ended up being the most-used pan in my kitchen. It's perfect for making scrambled egg sandwiches, so I use it several times a week.
If the handle starts heating up or the nonstick peels off, I'll update this review, but in over six months of weekly use, it's performed like a little champ! And, over time, the cartoon egg on the handle has grown on me, it seems kind of shocked or amazed... perhaps because it has to watch me cook an egg!
BTW-The secret to light, fluffy scrambled eggs is to use a low heat and stir constantly. It takes a little longer, but it is so worth it.

(More customer reviews)The Nordic Ware Microwave Omelet Pan is quite a nifty little kitchen gadget. Before purchasing, I had said to myself, "Making an omelet in the microwave? Impossible." I got this pan and was proven wrong. To my surprise, the omelets made in this pan come out rather tasty. I was also pleased that the eggs come right out of the pan and don't stick at all. However, as others have said, you must use some kind of cooking spray, oil or butter for a completely non-sticking surface when removing the egg from the pan. It's easy to clean. No stuck-on, hard to remove egg whatsoever.
I remember reading one or maybe a few reviews that said their pan didn't come with instructions. Mine did. I followed them and the resulting omelet was not the best. It came out a bit hard. It was edible and not bad but not particularly the best omelet. The instructions are rather standard and goes as follows:
- 2-4 eggs
- 2 tablespoons of milk or water
- Beat in a small bowl
- Pour the mixture in the omelet pan evenly on both sides
- Cook for 2 minutes
- Stir from outside in
- Place the toppings on each half and cook for another 1.5 minutes
- Remove from the microwave
- Fold the pan to make the omelet
What the instructions do not take into account is the wattage of the microwave you're using or that times may vary depending on the amount of eggs you use.
My findings based on the use of 2 eggs, which I think is more than enough(for me anyway), is that hand or electrically mixed eggs took 1.15 to 1.30 minutes to be completely cooked or when the eggs started to bubble up and it looked like they would bubble over and the wet egg was consumed. Any longer or following the above directions provided by Nordic Ware resulted in the hard or rubbery eggs that I described earlier. However, using the times I indicated resulted in a soft, fluffy, fully cooked omelet which was more to my liking. Another important note is that I'm using a 1250W microwave. Perhaps the factory directions would be more suitable if you have a lower wattage microwave or are using more than 2 eggs.
I mostly make cheese omelets. I like to place the cheese on after I take the omelet out of the microwave because from experience when I did it as instructed, the cheese came out watery.
Pan fried, stove-made omelets taste better in my opinion but this pan still does a good job and in a fraction of the time.
I also use the omelet pan for making eggs to put in my breakfast sandwiches. I just beat one egg and pour it on one side of the pan. Cool gadget for quick eggs in the morning.

I've used this handly little device to make soft-boiled and hard-boiled eggs, and they have always come out perfect. Just drop it in the water and take the pan off the burner when the color advances to the point you want your eggs cooked.

(More customer reviews)I had the older version of this skillet. It was half the price but only came with one pan. I loved it. The nonstick coating was virtually indestructible. I used metal utensils in it all the time and never got so much as a scratch. Well, I became so confident in the strength of the coating that I used a steak knife to cut a steak in half while it was in the pan to see if it was done. It wasn't knife proof. I guess I could have just ordered a replacement pan from Zojirushi, but I decided to buy this EP-RAC50 instead. It's better than the old one was. It's a little bigger, a little nicer looking. But I really like having the two pans. I can brown meat for spaghetti in the grill pan, and then boil noodles in the other. I don't even use the stove top anymore. You don't have to worry about pans being centered on the burner or sitting flat. Plus you have much more precise control over the temperature. It heats very evenly and the thermostat seems to be very accurate. I also like the fact that the nonstick coating is NOT Teflon, which is carcinogenic. And it's much more durable than Teflon. I don't need to use oil or butter because nothing sticks. Not even eggs. It wipes clean with a dry paper towel! Another nice thing is that you can remove the pan from the base so there's less chance of burning your food when it's done cooking unlike with some cheaper skillets where the pan and heating element are one unit. If this skillet breaks, I'll buy another one. It's worth every penny.

Don't get me wrong this omelet maker is working, but it is another gadget-toy, which will take space in your kitchen and cost you about $20.00 w/shipping.
If you really, really want to make an omelet in your microwave follow the instruction:
Take ceramic or glass (microwave safe) cup or bowl cover it with a little bit of butter, add two eggs and what ever else you like, bit eggs with a fork a little bit, cover with paper towel or paper plate and microwave for 1-2 minutes - and you got yourself an omelet, and you saved $20.00.
